Meal prep should be easy!
To me it’s always a simple combination of 3 things – whole grains, protein, and lots of veggies.
I did ZERO shopping and only cooked for 30 minutes – and I have about 10 meals worth of food!
260 calories and over 30 grams of protein!
I cooked my grains altogether from my pantry – quinoa, couscous, and lentils. While those simmered I took the zucchini and green pepper from the garden and cooked it with the little bit of a red onion I had left.
I found some frozen cauliflower rice that I added to the grains, and frozen broccoli went into the veggies with kale and frozen chicken!
I flavored both with a little sriracha and soy sauce. So yummy, so simple!
Whatever flavor you like you can go crazy with it, just keep the base of the meal simple. Doesn’t get better than that!
