Beet & Goat Cheese Spiralized Salad

This was one of the easiest salads you could ever make (especially if you buy pre-spiralized beets which you can find almost anywhere these days). Couldn’t be simpler, and it is barely 100 calories!

Plate-full of spiralized beets, one serving of your favorite goat cheese and herb (I used thyme), drizzle 1 tbsp of EVOO over the plate and microwave for 30 seconds – that will loosen up the goat cheese so you can stir it all together. I also then topped mine with a few sunflower seeds!
