This was super delicious and perfect for these cool winter days! I made a huge pot of this and once it cooled down divided it into containers for the week, and also froze some in baggies to take out in a few weeks!
1 package sweet italian sausage
1 cup dry lentils (soaked overnight or minimum few hours)
6 cups kale
5 stalks celery
5 medium carrots
1 qt low-sodium chicken or vegetable stock
1 qt water
1 tsp thyme, oregano, and parsley
Salt, pepper, and red pepper flakes to taste
This couldn’t be easier. I cut up the onion, celery, and carrots and sauteed them in about a tbsp of EVOO. Added the sausage which I took out of the skin (or you could buy ground sausage of course). Add in the herbs, tiny bit of salt, pepper, and LOTS of red pepper flakes, and let that cook all up.
When the veggies were cooked and the sausage was cooked through (no more than 10 minutes) I added in the lentils, stock and water and let it simmer for an hour.
Once the lentils have puffed up and everything’s cooked, I added in LOTS and LOTS of kale, let that cook down for 10 minutes, and dinner is served!
