Yummy holiday bites that are perfect for dessert, a snack, or even to bring to a cookie swap – they don’t have to know how healthy they are! Even better, these are dairy-free, gluten-free, soy-free and completely vegan!
1 cup oats
4 scoops (plant-based) chocolate mocha protein powder (I used MRM Veggie Elite)
1 cup pumpkin puree
4 tbsp agave
1/4 cup unsweetened applesuace
4 tbsp dairy-free mini chocolate chips
1 tsp each baking powder and baking soda
pinch of salt
This makes about 34 small cookies – form place them on a parchment-lined baking tray and bake for 15 minutes. Done!
