This doesn’t even count as a recipe because it’s so simple and easy but it was delicious so I still wanted to share it!
I was craving a BLT so threw it all together instead. I just baked off bacon (Applegate uncured Natural Sunday Bacon is my favorite with no additives) – 2 per salad, soft-boiled eggs (also 2 per salad), and halved a few cherry tomatoes and that was the salad! All over a couple cups of chopped kale. My dressing was a little indulgent with half tablespoon each mayo and sour cream, and about a tablespoon of vinegar to thin it out. So easy, so yummy, 260 calories, doesn’t get much better!
