Portobello Egg Cups

Seeing a theme here with the egg cups? Well I’m always trying different ways to have healthier carbs and with eggs is especially true because I LOVE eggs and toast. Nothing wrong with whole grain bread once and awhile but I love a good alternative for the every day!

As you can imagine this was incredibly easy!

I scooped out two portobello caps, filled them with kale and feta (hardly a couple tablespoons of each) topped with a little sea salt, pepper and red pepper flakes. Carefully crack an egg in each cap, and bake it at 375° for 18-20 minutes or until the whites are cooked through. Easy!!

For TWO mushrooms/2 eggs it was still only 200 calories! How could you go wrong?
