Ultimate Protein Muffins!

Brace yourself – this is a good one!
I call these the ULTIMATE muffins simply because they are the best I have ever made.

Oh P.S. they are also completely GLUTEN-FREE and VEGAN! And KETO! #igotyoucovered

Ingredients:

2 cups vegan vanilla protein powder 

1 1/2 cups almond flour (or “Cup to Cup” gluten-free flour)

2 tbsp organic virgin Coconut Oil 

1 1/2 ripened bananas, mashed

1 1/2 cups fresh or frozen blueberries

1 tsp baking soda

1 tbsp chia seeds

1 tbsp flaxmeel

zest of 1 lemon

2 tbsp agave nectar

1 1/2 cups water

This couldn’t be easier! Mix all your dry ingredients, melt your coconut oil and stir that in, also adding your water, mashed bananas (just use a fork), add your blueberries gently stirring them in, and you’re good to go! This literally is fool-proof!

Grease your muffin tray or line it with muffin paper, and bake at 325 for 20 minutes or until a toothpick comes out clean. Enjoy!!

Remember that these are PROTEIN muffins, so not being made with normal flour (and vegan) they’re not going to act like normal muffins, so don’t be afraid if they don’t rise up out of the tray (they won’t really change shape much) but they will taste delicious and that’s all that counts!
