Carb Free Breakfast Pizzas

This could not be easier! I’ll be honest it came from having nothing in my fridge for food (everything’s gone because it’s almost meal prep time for the new week!) This is only THREE ingredients! You can play this up and add more veggies or whatever you’d like to make it your own, but this is the basic version for you, and it’s super low carb and under 100 calories!

Ingredients (for 1 serving):

1 tbsp parmesan cheese

1 tsp marinara sauce

1 egg

Yup that’s it!

So it start’s by making a “frico” which is when you bake a circle of parmesan cheese – it becomes crispy and delicious, and I’ll post soon one of my favorite easy entertaining recipes that is a HUGE hit that starts this way!

Place 1 tbsp of parmesan cheese in a circle on a parchment paper-lined baking tray, and bake for 7-10 minutes at 400º until it begins to bubble and just get golden brown around the edges. It will look soft and undercooked – but take it out and let it sit for 5 minutes and it will harden into a nice disk as it cools!

Meanwhile you want to cook a nice sunny-sid up egg. You need just barely a tsp of either coconut oil or EVOO in the pan, and cook an egg 3-5 minutes – leave a little bit of the whites still running because these will finish cooking in the oven.

When you’ve let your parmesan “frico” pizza crust sit for 5 minutes, top it with the sauce and the egg, and bake for another 3 minutes – that’s it! Just let it sit for a couple minutes for the cheese to re-harden and enjoy your pizza!
