This was another super-easy snack inspired by my recent lemon-blueberry protein muffins that I am completely obsessed with. This only has 6 ingredients, it couldn’t be easier!
Ingredients (makes 12 muffins):
2 cups almond flour or cup-to-cup gluten free flour
2 cups matcha protein powder (I used Orgain plant-based matcha latte)
3 tbsp maple syrup
1 tbsp chia seeds
1 tbsp flax seeds or flaxmeal
1 cup oats
2 cups water
This is super-easy, mix all of those ingredients together, pour into a greased or paper-lined muffin tray, and bake at 375º for 25 minutes!
