So this one’s more of an idea than a step-by-step recipe, but was SO delicious!
I made two kinds of stuffed sweet potatoes, one turkey-based and one completely vegan; both are DELICIOUS! I made big batches of this, because you know – #mealprep.
So I starteed by roasting the sweet potatoes whole for an hour at 400º
For the filling for the turkey, I cooked up 4 slices of bacon (I like Applegate uncured sunday bacon), then removed that, cooked up the ground turkey, and once it was cooked through I turned off the heat and stirred in a can of black beans. So easy!
For the other, I sauteed baby portobello mushrooms, then added black beans and chick peas. Both got 1/4 slice of avocado, and were DELICIOUS!
