Shrimp Fajita Bowl

Easy and quick, and perfectly light for summer!

Ingredients (makes 4 servings):

1 pound shrimp

2 bell peppers

1 onion

1 lime

1 avocado

2 cups greens (I used baby kale)

4 cups cauliflower rice

Fajita Seasoning (watch sodium if you’re buying it prepacked – I just used cumin, oregano, chilli seasoning and paprika)

This is super easy! Start by sauteeing your peppers and onions for 8-10 minutes. If you’re not scared to burn them, crank up the heat once they’re cooked through so you can get a good char on them for a quick minute afterwards. Turn the flame back down and add your shrimp and kale with your fajita seasonings and lime juice, cooking for 3-5 more minutes. That’s IT!

Put it over your cauliflower rice which you can absolutely do frozen and microwave (I buy frozen and warm it on the stove). Add 1/4 sliced avocado on the top and enjoy!
