This doesn’t even count as a recipe, but it’s still worth sharing!
I love spaghetti squash and that’s definitely my go-to pasta substitute but I found these “tofu noodles” at the store and they are so incredibly empty in calories/nutrients that I had to try them, and I was pleasantly surprised!
All I did was drain and rinse the noodles, boil them for 2-3 minutes per instructions, and topped it with these vegan sausages that I seared and mixed in marinara sauce. SO filling and delicious, does it get any easier???
