Stuffed Salmon

Salmon is a great source of protein – 25g for only around 150-160 calories. That being said, to me it’s a little boring, a little bland.

SO this was a super easy way to add some flavor without adding calories! On a pan on the stove I sautéed a cup of spinach, squeezed a lemon on it (I also squeezed the last few drops of the lemon directly on top of the salmon). I grated a clove of garlic and about 1/2 inch of ginger, carefully sliced a pocket into the salmon and stuffed the spinach mixture in! Bake at 375 for 20 minutes and it’s as easy as that! I ate this with my leftover mujadara from my meal prep, and an easy meal was ready in no time!
