Does that sound impossible? Well it’s not and it’s why I LOVE meal prep! Use what you have, buy in bulk and prep your meals for the week!
What I did for this week was found on sale organic chicken leg quarters (yes less protein than chicken breast but I like to change it up once and awhile). I spent $5 for 8 pieces! That’s actually the only thing I bought, and paired it with kale and a grain blend that I already had, but even if you had to go buy those two things, you would only be spending another $5 (bringing us to just $10 – and with 8 servings each meal is under $2!)
Super, super simple! All I did was bake the chicken for 45 minutes at 375 after rubbing them with EVOO, salt, pepper, garlic, paprika and thyme. I would’ve grilled them but they do come out so juicy and moist this way, and it is even easier. Cook your grains per instructions and that’s it!
I tossed the kale with a little bit of balsamic vinegar and EVOO for a quick salad to lay it all on, and I also drizzled 1/2 tbsp balsamic vinegar over my grains when they were done. Balsamic glaze drizzled over the chicken and the meals are complete!!
