Autumn Chicken Skillet

This is the perfect high-protein, low-carb one-pan meal for the colder days ahead! Super easy, super nutritional, and super delicious!


1 pound boneless skinless chicken breast, 1 inch cubes

4 pieces bacon, diced

1 sweet potato, 1/2 inch cubes

2 Granny Smith apples, 1/2 inch cubes

1 cup Brussels sprouts, halved

1 shallot, diced

2 cloves garlic, diced

1 tsp thyme

1/2 tbsp E.V.O.O. Or coconut oil

1 tbsp maple syrup

1 tsp cinnamon

Start by cooking the chicken in the oil for 8-10 minutes or until completely cooked through. Remove it from the pan and add the bacon, cooking for 4-5 minutes. When the bacon is browned, remove it and drain all but a tsp of the fat from the pan.

Add the sweet potato, apples, brussel sprouts, shallots and garlic to the pan, cooking for 15 minutes.

Add back in the chicken and bacon for 3-5 minutes to warm back through, along with the thyme, cinnamon, and maple syrup.

Serve up and enjoy!
